- ¼ cup liquid egg whites (around 4 eggs)
- 1 scoop (25g) vanilla whey protein powder
- ½ banana, mashed
- Splash of almond milk (if needed)
- ¼ cup (25g) fresh or frozen blueberries
- ½ tsp coconut oil
👩🍳 Instructions
- Mix the Batter:
In a bowl, whisk together the liquid egg whites and vanilla protein powder until smooth.
Stir in the mashed banana and blueberries.
If the mixture is too thick, add a splash of almond milk to loosen it. - Heat the Pan:
Warm ½ tsp coconut oil in a non-stick pan over low to medium heat. - Cook the Pancake:
Pour in the pancake mixture and cook for about 5 minutes, or until small bubbles form on the surface.
Ensure the pancake is set before flipping. - Flip & Finish:
