  • 7 oz. (200g) cottage cheese
  • 4 handfuls watercress
  • Peel of 1 lemon
  • 6 eggs
  • ΒΌ cup (60ml) soy milk
  • 1 tsp mixed herbs
  • 4 tsp coconut oil
  • 3.5 oz. (100g) smoked salmon, chopped

  1. Make the Filling:
    In a high mixing bowl or food processor, blend the cottage cheese, watercress, and lemon peel until smooth. Set aside.
  2. Prepare the Omelet Mixture:
    In a separate bowl, beat the eggs with soy milk and mixed herbs until well combined.
  3. Cook the Omelets:
    Heat 1 tsp of coconut oil in a medium-sized frying pan.
    Pour in ΒΌ of the egg mixture and cook over medium heat for 2 minutes, or until the egg is set.
    Flip and cook the other side for 30 seconds.
