- 7 oz. (200g) cottage cheese
- 4 handfuls watercress
- Peel of 1 lemon
- 6 eggs
- ΒΌ cup (60ml) soy milk
- 1 tsp mixed herbs
- 4 tsp coconut oil
- 3.5 oz. (100g) smoked salmon, chopped

- Make the Filling:
In a high mixing bowl or food processor, blend the cottage cheese, watercress, and lemon peel until smooth. Set aside. - Prepare the Omelet Mixture:
In a separate bowl, beat the eggs with soy milk and mixed herbs until well combined. - Cook the Omelets:
Heat 1 tsp of coconut oil in a medium-sized frying pan.
Pour in ΒΌ of the egg mixture and cook over medium heat for 2 minutes, or until the egg is set.
Flip and cook the other side for 30 seconds.
Remove and set aside. Repeat for the remaining 3 omelets. - Assemble the Wraps:
Spread the cottage cheese paste evenly over each cooked omelet.
Top with chopped smoked salmon. - Serve:
Roll each omelet like a wrap and cut in half. Serve fresh and enjoy!
