🔸 For the Filling:

  • 2 medium russet potatoes, peeled and cubed
  • 1 egg yolk
  • ½ cup parmesan cheese, grated
  • 2 tablespoons all-purpose flour
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch nutmeg
  • 2 tablespoons chives, finely chopped

🔸 For the Breading:

  • 2 tablespoons all-purpose flour (for dredging)
  • 2 eggs, beaten
  • ½ cup breadcrumbs
  • 1 cup vegetable oil (mixed with breadcrumbs)

👩‍🍳 Instructions

  1. Boil the Potatoes:
    Boil the peeled and cubed potatoes in salted water for about 15 minutes or until fork-tender.
    Drain and mash finely using a potato masher or ricer. Let cool completely.
  2. Prepare the Filling:
    Add the egg yolk, grated parmesan, flour, and chopped chives to the mashed potatoes.
    Season with salt, pepper, and a pinch of nutmeg.
    Mix until well combined.
    Shape into golf ball-sized rounds and set aside.
  3. Preheat AirFryer:
    Preheat your AirFryer to 390°F (199°C).
  4. Prepare the Breading:
    • Mix the vegetable oil with breadcrumbs and stir until loose and crumbly.
    • Set up a dredging station with flour, beaten eggs, and the breadcrumb mixture.
  5. Bread the Croquettes:
    • Coat each potato ball in flour, then egg, then breadcrumbs.
    • Roll into a cylinder shape and gently press the coating to stick.
  6. AirFry the Croquettes:
    • Place half the croquettes into the AirFryer basket (don’t overcrowd).
    • Cook each batch for 7–8 minutes, or until golden brown and crispy.
